Cabbage extract anthocyanins is red food color made from purple cabbage (Cruciferae) through extraction, concentration, refining and sterilizing processes. Cabbage extract main compositions are anthocyanidins and flavones. Cabbage extract is a red purple powder which is easily dissolved in water and water-alcohol solutions. Cabbage extract has good heat and light resistant and storability. The pH value of the solvent will affect its hue. It will become red or red purple in acid, blue in neutral and green in alkaline.
